Canh Chua Ca Recipe

Canh Chua Ca Vietnamese FoodCanh Chua Ca is a fish soup with a sour taste from tamarind.

Ingredients:

  • 1 pound Fish Fillets, cut into half inch strips
  • 2 Onions, sliced
  • 1/2 teaspoon Black Pepper
  • 4 tablespoons Fish Sauce (nuoc mam or nam pla)
  • 6 tablespoons Tamarind concentrate
  • 6 tablespoons hot Water
  • 5 cups Fish Stock
  • 1 fresh Tomato, skinned and cut into wedges
  • 2 small Red Bird Chilies, sliced
  • 1 1/2 cups Okra, sliced
  • 1 cup Mung Bean Sprouts
  • 1/2 cup Cilantro, chopped
  • 2 teaspoons hot Pepper Oil (which you can make by sauteing 1/2 teaspoon dried hot peppers in 2 teaspoons of oil)
  • 1 Lime, cut into wedges

Instructions:

  • Mix the scallion, black pepper, and 1 Tablespoon fish sauce in a bowl. Add the fish and let marinate for 15 minutes.
  • Add the tamarind concentrate with the water to another bowl. Stir and let it sit until it is ready to use.
  • Take a large saucepan and bring it to a boil.
  • Add the tamarind, tomato, chilies, 3 tablespoon fish sauce. Let it simmer for 4 minutes
  • Add okra and the fish. Let it simmer until done, about 3 minutes.
  • Remove the heat and then add bean sprouts, cilantro and pepper oil.
  • Serve together with rice and put the lime wedges on top.
