Chicken Pho is a soup made with chicken and noodles.
Ingredients:
1 whole Chicken, cut to pieces
1 lb Rice Noodles, dried
1 Ginger, slices
4 Onions, halved lengthwise
2 Onions, chopped
10 leaves Saw Tooth Coriander
10 Star Anise
2 Garlic cloves
1 Cinnamon Stick
8 Cardamom Seeds, crush in mortar
1/2 Ground Pepper
1 Coarse Salt
10 tablespoons Fish Sauce
Instructions:
Heat the oven to 400°. Put the onions and ginger on a baking sheet and roast until the get lightly brown. aprx. 30 minutes.
Fill a large stockpot with the water and bring to a boil. Add the onion, ginger, the quartered chicken, chicken bone, salt and sugar. Lower the heat and wait until chicken is cooked. aprx. 30 minutes.
Remove the meat from the chicken bones and put it in refrigerator. Return the skin and bones to the stockpot and let it simmer for 2 hours.
Put the soup into a large pot and add fish sauce, cook for about 15 minutes.
In a large bowl of warm water, soak the noodles until pliable, aprx. 20 minutes.
Take a large saucepan with salted water. Drain the noodles and add them to the pan. Let it boil for about 3 minutes.
Put the noodles in bowls for serving and add scallion.
Add the chicken from the refrigerator to the large pot with soup and let it simmer until heated through.
Add the soup to the bowls with noodles. Also add to the bowls bean sprouts, basil, lime wedges.
Server together with asian chili-garlic sauce and hoisin sauce.
